Critical Control Point, CCP is a procedure in HACCP program which, if controlled, can prevent and reduce a hazard to an acceptable level. Water Activity, Moisture, Temperature, and pH are some of the CCPs commonly used in food industries. However, available tools and proper measurement method are not widely understood.
